Chinese artichoke, also known as, Chorogi, Knotroot, Artichoke Betony, or Crosne is a highly underrated tuber.
It adds a delightful texture and visual interest to any salad.
They grow vigorously during Summer and Autumn, covering the garden area with a dense matt of foliage.
It is possible to begin to harvest them during late summer but we find it best to wait until winter, when the quantity is greater.
They prefer soil that does not dry out too much as they do not develop the tuber at a very great depth.
Chinese artichoke need very little care and do best in full sun.
They are quite tiny compared to Jerusalem Artichoke but multiply rapidly.
